To Cook: This stunning joint makes a for a beautiful roast in the hands of a skilled chef. Cumbrian lamb tends to be leaner and offer a clearer, well defined depth of flavour. Roast with root veg, rosemary. Perhaps finish cooking with an apricot and rosemary stuffing layered over the top of the joint to absorb the final juices. Rest before serving.
